- 1 ½ pounds baby potatoes, halved
- 4 tablespoons unsalted butter, melted
- 6 cloves garlic, minced

- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning or dried thyme
- ½ teaspoon paprika (optional)
- ½ cup beef broth (low-sodium recommended)
- Chopped fresh parsley, for garnish (optional)
Instructions
- Optional: Heat olive oil in a skillet over medium-high heat and sear the beef in batches until browned. This step adds extra flavor but can be skipped.
- Place beef and halved baby potatoes into your slow cooker.
- In a small bowl, mix melted butter, minced garlic, salt, pepper, Italian seasoning, paprika, and beef broth.
- Pour the garlic butter mixture over the beef and potatoes. Stir gently to coat everything evenly.
- Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef is fork-tender and potatoes are cooked through.
- Before serving, stir gently and taste for seasoning. Add more salt if needed. Garnish with fresh parsley.
- Serve hot, optionally with crusty bread to soak up the garlic butter sauce.
Notes
Use chuck roast for the best texture. You can add vegetables like carrots or mushrooms during the last hour of cooking. This dish is naturally gluten-free and freezer-friendly.
