- 8 oz fettuccine, linguine, or spaghetti
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 pound large shrimp, peeled and deveined
- Salt and black pepper, to taste
- 4 cloves garlic, minced
- ½ teaspoon red pepper flakes
- ½ cup sun-dried tomatoes (in oil), chopped
- 1 teaspoon Italian seasoning
- ¾ cup heavy cream
- ½ cup grated parmesan cheese
- ¼ cup reserved pasta water (as needed)
- Juice of ½ lemon
- Fresh basil or parsley, chopped
Instructions
- Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve ¼ cup of pasta water and drain.
- In a large skillet, heat olive oil and butter over medium-high heat. Season shrimp with salt and pepper. Sear for 1–2 minutes per side until just pink, then remove and set aside.
- Lower the heat to medium. Add garlic and red pepper flakes to the same skillet and sauté for 30 seconds until fragrant.
- Stir in sun-dried tomatoes and Italian seasoning. Add the heavy cream and stir, letting it simmer for 2–3 minutes.
- Stir in parmesan until melted and smooth. Thin with reserved pasta water if needed.
- Return shrimp and pasta to the skillet. Toss everything together with lemon juice and herbs.
- Serve warm, topped with extra parmesan and fresh basil.
Notes
For extra flavor, add a splash of white wine or stir in spinach before serving. Use raw shrimp for the best texture, and don’t skip the lemon—it balances the creamy richness beautifully.
