Description

A romantic, creamy shrimp pasta that’s bursting with garlic, sun-dried tomatoes, and a hint of spice—perfect for special evenings or a cozy dinner for two.


Ingredients

  • 8 oz fettuccine, linguine, or spaghetti
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 pound large shrimp, peeled and deveined
  • Salt and black pepper, to taste
  • 4 cloves garlic, minced
  • ½ teaspoon red pepper flakes
  • ½ cup sun-dried tomatoes (in oil), chopped
  • 1 teaspoon Italian seasoning
  • ¾ cup heavy cream
  • ½ cup grated parmesan cheese
  • ¼ cup reserved pasta water (as needed)
  • Juice of ½ lemon
  • Fresh basil or parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve ¼ cup of pasta water and drain.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Season shrimp with salt and pepper. Sear for 1–2 minutes per side until just pink, then remove and set aside.
  3. Lower the heat to medium. Add garlic and red pepper flakes to the same skillet and sauté for 30 seconds until fragrant.
  4. Stir in sun-dried tomatoes and Italian seasoning. Add the heavy cream and stir, letting it simmer for 2–3 minutes.
  5. Stir in parmesan until melted and smooth. Thin with reserved pasta water if needed.
  6. Return shrimp and pasta to the skillet. Toss everything together with lemon juice and herbs.
  7. Serve warm, topped with extra parmesan and fresh basil.

Notes

For extra flavor, add a splash of white wine or stir in spinach before serving. Use raw shrimp for the best texture, and don’t skip the lemon—it balances the creamy richness beautifully.
