Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup light brown sugar, packed
  • ½ cup granulated sugar
  • 3 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1 tbsp instant coffee granules (dissolved in 2 tbsp hot water)
  • 1½ cups all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • ½ cup sour cream
  • For the Caramel Sauce:
  • 1 cup granulated sugar
  • 6 tbsp unsalted butter, cubed
  • ½ cup heavy cream (warm)
  • Pinch of sea salt (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×9-inch baking pan.
  2. Cream butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time. Mix in vanilla and dissolved coffee.
  4. In another bowl, whisk flour, baking powder, and salt. Gradually mix into the wet ingredients, alternating with sour cream.
  5. Pour batter into pan and smooth the top. Bake for 30–35 minutes or until a toothpick comes out clean.
  6. For the caramel, melt sugar in a saucepan over medium heat, stirring constantly. Once melted and golden, add butter. Stir in warm cream slowly, then remove from heat and stir in salt.
  7. Let cake cool 10–15 minutes, then poke holes all over. Pour warm caramel sauce over cake and let it soak in.
  8. Cool at least 20 minutes more before serving. Enjoy warm or at room temperature.

Notes

For extra flair, top with vanilla ice cream, berries, or a sprinkle of toasted nuts. This cake gets even better the next day!
